Roasted Snapper


  • 2 red snapper fillets

  • 2 T extra virgin olive oil

  • 1 T fresh lime juice

  • 1 T cilantro, freshly chopped

  • Salt and pepper

  • 1/2 cup Organic salsa 

Preheat oven to 400 degrees. Brush 1 tsp olive oil on a baking sheet and place fish, skin side down. Combine remaining olive oil, lime juice and cilantro and brush on each fillet. Sprinkle with salt and pepper to taste. Allow to sit for 15 minutes, then bake for 20 minutes or until just cooked. Top with Salsa to taste.
