Fresh Grapefruit Salad

Grapefruit is such an amazing fruit on its own, but try pairing it with some creamy sliced avocado, zingy raw ginger, and fresh cilantro for a beautiful and refreshing salad!

 

Makes 1 serving - Prep time: 5 minutes - Cook time: 5 minutes

 

Ingredients:

1 small grapefruit, peeled and sectioned

1 cup arugula

1 cup copped romaine or butter lettuce

1/4 teaspoon finely chopped fresh ginger

1 tablespoon extra virgin olive oil

1/2 avocado, sliced

1/4 cup chopped fresh cilantro

 

Directions:

  1. - Combine grapefruit, arugula, romaine, and ginger in a bowl.
  2. - Drizzle with the oil and toss to coat.
  3. - Top with the avocado and cilantro, and enjoy immediately!
