Pineapple-Ginger Rice Bowl

This meal in a bowl is delicious and filling as is, or topped your choice of grilled tofu, steamed fish, or roasted chicken! 

 

Makes 4 servings - Prep time: 10 minutes - Cook time: 10 minutes

 

Ingredients:

3/4 cup low-sodium vegetable broth

1 tablespoon finely grated ginger

2 tablespoons brown rice miso or light yellow miso

4 cups cooked brown rice

2 cups edamame, shelled

1½ cups fresh pineapple, chopped

1/4 cup fresh cilantro, chopped

 

Directions:

  1. - In a large, deep skillet, bring the broth and ginger to a simmer over medium-high heat and simmer for 2 minutes.
  2. - Remove the skillet from the heat and whisk in miso. Return to the heat, add in the rice, edamame, and pineapples; toss gently. 
  3. - Cook until all the liquid is absorbed and the rice is hot throughout, this should be an additional 3 to 5 minutes.
  4. - Stir in fresh cilantro, serve and enjoy!
